I remember the performance mated on LP with Mozart 41. They were both characteristically virtuousic, but somewhat stiff according to the critics then. We (my family and father and I) thought so also. So I acquired a copy of the reissued Philips Concertgebouw version while travelling in Germany. I still marvel at how the 60's Cleveland winds and brass play "with chops," as you've said.I have over 15 Beethoven 5ths and have much to admire about most of them. So there is no best, per se. I haven't ever heard Maazel's--do you own it on vinyl?
