This is a good place to start. I wouldn't use cassette for anything other than checking my work though, especially with inexpensive machines.DAT (digital audio tape) is an excellent option, especially if you want long recording times and ease of use. Look for a good clean Panasonic SV-3700 or SV-3800 on eBay. I own three of these machines and they are truly outstanding. A real workhorse.
My recommendation for a foolproof microphone which will yeild outstanding professional results even in the hands of the inexperienced is the R0DE NT-4 Stereo Microphone. Just pop your headphones on, place the mic where you like the sound best, and roll tape. Instant gratification.
You'll also need a decent stereo microphone preamp which could be had for about $100, more if you want to get fancy.
If you're patient and diligent, you should be able to put a setup like this together, minus the cost of cables (2x XLR from preamp to DAT Recorder) for about $550. I know this is more than you want to spend, but if you can stretch the budget, you will be truly astounded at the resulting recordings.
