Not sure if our definition of sweetness is the same. But in regards to body and fullness vs getting thinner and dryer. I read some old Joe Rosen posts(Quite a character) and he was on the money when he was talking about idle current. There is a sweet spot in the current which probally has to do with many varibles. He advised to increase the current till it gets to fat or the bass to loose or decrease the current until it gets to thin or dry. Find the spot that is in the middle. If you have a varible fixed bias this is easy. If you use cathode bias you could set up multiple resistors on a switch.Are you liking your 845's?

PS Not sure about second harmonic stuff. Would be interesting if 2nd harmonics change with idle current.
