I suspect they run the gamut, and if I have to get serious for a minute, I'll have to admit I can't say what their individual motives are.I suspect most believe to one degree or another that they are really in high end to make money. Some are fooling themselves, some may make money, and some are, as you say, rich folk just playing around.
However, my totally uneducated guess is that most high end manufacturers believe that cables make a difference. However, even if that is true, I would never claim that is proof that cables really do make a difference.
BTW, I love the internet. I learn something new everyday. I thought big corporations grew on trees in orchards owned by Republicans.
