Sonys desktop systems are liquid cooled, but liquid cooling doesnt make the computer silent, there still needs to be a fan. Its a common misconception that liquid cooling is more quiet and its simply not true. Air and liquid cooling are about the same when i comes to noise. But air cooling is way cheaper. As for a silent laptop, your not gonna find one because they all have a fan, you cannopt have passive cooling in a laptop because of space constraints. It is possible to make a nearly silent desktop, yuou would need a large case with a very large passive heatsink for the cpu, but your still most likely going to need at least one fan, the get the hot air our of the case. A single 120mm slow turning fan would be fine and with the right one it would be nearly silent.
Anyways back to the laptop, you can try the Ibook or Powerbooks, both are pretty quiet and have firewire. And im not quite sure what u mean about it having to be a laptop because u need a screen and mouse, whats wrong with a regular desktop pc, the generally have screens, mice and keyboard, does it have to be portable for some reason??
