I'm not Abe but will offer some thoughts if you may find them useful.
Your proposed MacMini M4 config is an excellent choice as a Roon server/endpoint and also as a general use computer for years to come. Running it headless is quite easy, very stable, and low-maintenance. Using an iPhone or iPad as a Roon controller is seamless. You are correct - you will need a monitor, mouse and keyboard for the initial setup, but after that it is unlikely that you will need those again.
Screen Share will work just fine with your MacBook Pro. If the battery is starting to swell, yes you should replace it ASAP. You don't say what model MB Pro you have, but for most models the battery replacement is not difficult. MB Air models are harder. But any competent tech can handle it. However if you want to use that as a reason to upgrade, all the better.
Sounds to me like you have a good plan going forward.
