Usually live recordings these days are heavily edited, heavily cuts and pastes in the post production, from several performances of the same programs, including dress rehearsals. They use plenty of microphones and they're close miking technique, so you will never hear true space and acoustics of the concert halls. That's a sad facts. Minimal miking technique requires a lot of time to set up to get optimum result and it is impractical these days to do so, due to union rules, cost of production and such.
