Funny as you may bring up this subject

While tube rolling may hold certain credibility towards true NOS tube types and varieties of manufacturers in yesteryears with tighter quality control and such, this cannot be taken into serious considerations if you are to look at modern tube types such as monoplate 2A3 from Sovtek, KR, AVVT, Chinese monoplate,etc. which doesn't even have the same distortion spectra as the original (blueprint/reference) RCA 2A3 bi-plate, or to some extent, the original electrical specifications published by the original makers of certain tube types (in this case RCA, or Cunningham for really, really old NOS monoplate 2A3)

Other examples such as JJ 12AX7 which also does not have the same distortion spectra and electrically not close to the original RCA 12AX7 specifications.

How about 6CA7 Sovtek "fat boy" variety which is supposedly a beam power tube and not like the true pentode EL-34/6CA7 variety. Yet many consumers would try to weigh this "beam power tube" against the true original copy of 6CA7/EL-34 pentode version for sonic comparison...just because they are labelled "6CA7">?!

I have long since given up on tube-rolling and decided to venture into my own little world of finding the sweetest spot on the particular tube brand of certain tube types that I prefer.

p.s. I'm not asking for your consensus on this subject but to reflect on my understanding and ultimately there are so many factors at play that casually holding the operating points static and then swapping in and out of certain tube type or brands for sonic comparison is just overly-generalised. Afterall: one tube brand of certain type operates optimally on one set of operating point may not be "optimal" to other brand of tube even though they are of the same tube type. This may contribute to the difference in sonic characteristics overall.

Lastly, try to understand that tubes are hand made products....
