1. Beethoven "Middle Quartets" Op. 59 #1,2,3; Op. 74, Op. 95(the late quartets - all over Op. 100 - can be quite demanding to listen to and understand - I have two complete sets of all quartets: The Emerson SQ has great sound and are technically flawless, but I personally like the Talich on Calliope for their more probing interpretations).
2. Dvorak String Quintets Op. 77 and 97 - Chilingirian Quartet on Chandos
3. Beethoven String Trios Op. 9 # 1-3 - Mozart String Trio on Denon
4. Mozart String Quintets - Arthur Grumiaux et al. on Philips
5. Mozart String Trios and Duos - Arthur Grumiaux et al. on Philips Duo
6. Shostakovich String Quartets - Eder Quartet on Naxos (5 discs), but I'd probably try the St. Lawrence Quartet on a recent very well reviewed recording of three of these fantastic pieces
7. Shostakovich and Schnittke Piano Quintets (piano with string quartet) - Boris Berman and Vermeer Quartet on Naxos
8. Schubert String Quintet op. 163 (additional cello with string quartet) - Emerson quartet with Rostropovich on DG
9. Brahms String Sextets - Raphael Ensemble on Hyperion
10. Beethoven Music for Wind Instruments - soloists of the Chamber Orchestra of Europe on ASV

I don't know if all of these recordings are still available, but try to track down the music - it's all fantastic stuff!

And if you like chamber jazz, search out any of Michael Moore's (clarinet) recordings on Ramboy. They are well recorded and acoustic. In particular, don't miss "Jewels and Binoculars: The Music of Bob Dylan" by Moore.
