I believe that SETs distort pretty much the same way our ears distort, so they sound natural and revealing to us, even when their measured distortion is high.Pentodes, beam power tubes, and push-pull circuits distort differently. That would explain why SETs sound better to you without distortion-decreasing feedback while other topologies sound better with feedback.
