Never mind "how" but "why" would a SACD player, especially a high-end SACD player offer the option to downmix the mch tracks to 2-channels, not withstanding that there me a handful (at most?) of SACDs that only have a multi-channel layer. That sounds like something an all-in-one HT processor or Apex receiver might attempt. The process does not sound at all palatable
