HowdyAs you suspected it's more complicated than that. On a MC SACD there are two separate sections, one stereo and the other MC. A stereo player will simply play the stereo section and ignore the MC section. In general these two sections are two separate mixes. I suspect that almost no-one mixes the MC and then mixes that MC to stereo. To be clear SACD players don't do downmixes of MC to stereo.
So in some sense the stereo of a SACD has the same ambiance as stereo recording have always had: anywhere from none to amazing :)
