The set up menu allows you to select distances to speakers, bass management, how to handle hybrid SACD discs, whether to output DTS to the digital out or convert it to PCM first, et cetera. One of the choices in the set up menu is usually "stereo" or "multi-channel".If you set it to "stereo", then when you play the multi-channel group on a multi-channel disc, the analog outputs will be downmixed to stereo. In this case, a player will usually play the stereo area of a multi-channel SACD. (Downmixing is not part of the SACD standard, so for the few discs that only have a multi-channel area, the player will usually just revert to the Redbook layer.)
All of this should be explained quite clearly in the owner's manual. If you don't have yours, you should be able to download it from the Denon website.
