I took a quick look at your link just for old time's sake. I used to perform factory authorized service for AR back in the day. I don't remember seeing a lot of AR3s come in, but it wasn't unusual for the AR3A pots to need replacing even when they were only a few years old.
About the grilles, we used a tool that we would make ourselves. It starts with a screwdriver with a thin blade about 1/8" in width or slightly smaller. We would heat it with a torch, then use Vice-Grips to bend just the very tip at a 90° angle. This could then be used to pry up the edges of the grille all the way around. We used a thin putty knife behind the tool to protect the wood. When all the work was done, we would reinstall the grilles using a few pre-colored paneling nails.
The woofers in these have a thin "membrane" installed behind them in the cabinet. It's intended to help keep fiberglass insulation and fibers out of the woofers. Try not to tear it during service. (Don't know if this is mentioned in the PDF.)
