A bridge on three series windings would create approximately 500V peak with respect to the core (chassis ground). Relative to the primary, peak differential voltage would be roughly 620V (500V above ground plus the negative half cycle of the line). Given that most transformers employ less insulation between multiple primary windings than between a primary and a secondary, it would be foolish to take such a risk just to save a few dollars.
