Most audio power transformers have a winding or two for the heaters (6.3 or 12.6 volts) and maybe another for the rectifier heater (5 volts) but I have never seen one with more than one high voltage winding. Typically the high voltage winding is tapped which is very different than having individual windings.

Now if a transformer had dual secondary windings, like a normal power transformer that could be wired to provide 120 or 240 volts out, and the windings were the same turns ratio (same voltage) then yes they could be combined to make half the voltage and twice the current in parallel or twice the voltage and half the current in series.
