The _key_ difference with a digital audio signal vs most other digital signals in this case is the _timing_ of the signal is just as important as the data for an SPDIF interface. The bandwidth of the cable affects the timing axis.To remove the cable effects audio needs a totally asynchronous interface where the timing is not one of the parameters the cable needs to preserve, but something that is actually signalled in the data itself.
All of the other data streams you talk about are asynchronous - ie the timing is generated on the final playback device based on the specification for the data (data determines 1080i vs 720p HDTV and the playback devices uses buffering its own timing source for these formats)
