I do a lot of burning. I have both types of recorders.Personal opinion, I hate using the real time burner unless I absolutely have to.
This opinion relys heavily on the type of recording programs you have. I do not have Pro Tools yet, but have a couple of other programs that are almost as good. The convenience an on the fly burner is great, but you can also record straight onto the computer then do your mixdown and make sure the sound is exactly the way you want it before the burn. Also the on the fly burner does not have an undo button.
Since you are trying to record vinyl onto CD, the computer would be a great option simply because you can remaster it yourself and enhance the quality of the audio.
