The Cyrix chip should work, it has the MMX enxtensions, check with whomever you are considering getting the hardware from and ask if their software MUST have a Pentium.
The Echo/Event Darla ran fine on my Cyrix MII 266 even though they state it won't.
As a worst case scenario, you can get real Pentium MMX 233 chips for around $50, and drop it into the motherboard. You may have to reconfigure some MB jumpers though, or set the CMOS set-up differently.
