Unfortunately in a large analog set up (over 24 trks)
with lots of outboard a patchbay system is really the best way to
go. Used bantom (TT) patchbays are fairly cheap half normalled or full
normalled and quite easy to wire. Professional studios have been using them for years. You just have to be really neat/clean when soldering and design an appropriate normalling scheme.
Grounding is really the biggest consideration and "destination ground" has always worked for me. Create a patch point ID spreadsheet on Excel, labelling all points and connectors for reference later on.

Having everything in one conveinient location and done well means you've saved yourself thousands, increased the value of your rig and won't have to do it again for a decade!!

I've even created bantom bays for my live rig (no more cabelling nightmares).My console, my DA-88s and outboard gear are all pre wired to a bunch of tuchel connectors (multi pin male/female), E-Dac like ADAT connectors work nicely too but are more expensive.

Done right, your signal path will not suffer or degrade.
