Great that you asked that ! IIR and FIR are used in combination anyway, usually IIR in the mix, in some instances, FIR in mastering, or go back to analog, for the Vibe.Some phase shifts in mastering are used to correct the phase shifts in the MIX, due to analog eq.
Sometimes in mastering, if the mix just does not get your blood flowing, their is no substitute for the 4 band para. in the SSL.
It is a matter of hearing and judgement. Sometimes phase coherency cannot be maintained through the chain, so it is time to use all the guns you have, to make the product sound as fine as possible.
You should see the phase meter on a solo piano. It is a wonder it even sounds like a Piano after eq, but electric pianos' can sound real, with some eq, of all types, careful judgement and a feel for the real instrument.
Eq is used mainly to not only balance the frequencies, but a good mix, may not sound good, due to masking, so then you have to juice up certain sounds to make them audible, or "juice down" some to take off the edge.
Some qualities of II2 EQ are preferred.
You want to see phase problems, look at analog compressors. They do radical things to the phase relationship of instruments.
To answer your question though, it takes whatever combination , to get the sound "in the pocket".
