Guess, to get a good live recording, you shouldn't use omnidirectional Mic's. You'll be getting too much "roomsound". Besides, if the acoustics of that room are not good to excellent, it will take a lot of experimenting with mic positions to get a reasonable sound. Any better condenser mic with a directional characteristic should be fine to start out with. Well, and then: stereomiking is a matter of years of experience; there are lot's of different ways, depending on the result your aiming for. Good luck!
