I would say that all of the Fantastiques mentioned are quite good in their own way. The Jarvi may not sound terribly "French", whatever that means, but it does have some good things going for it. I can't remember if he included the extra cornet solo in the "bal" movement, but I very much like that addition when they do. Jarvi has terrific deep bells that are pitched in the correct, lower octave. Towards the end of the "Witches Sabbath", when the entire brass section sounds the Dies Irie in unison, Jarvi holds the brass back so that you can hear the swirling string and woodwinds runs. That might not be what Berlioz had in mind, but I think it's quite effective.The Gergiev recording came out much better than I had anticipated. I don't think of the Vienna Philharmonic as being terribly idiomatic for Berlioz, but they did a real good job here. The first sounding of the Dies Irae, played by tubas and bassoons in octaves, is about as good as I've ever heard it. I was rather impressed. The earlier Colin Davis recording with the VPO DID include the extra cornet solo - Gergiev doesn't. FYI on that point. You can get the Davis on a DVD-A.
As I recall, the Paray recording (exciting, as always with him) has several very appropriate fillers by French composers. Maybe somebody can help or correct me on that point.
