From my experience over the last two years of trying to get as many of the top 5751's as I could manage....here's my take.

For value right now the GE 3 mica 5 star tubes are the best bang for the buck, lots of good examples out there, even on Ebay. I have both black and grey plate tubes and they are all similar with the blackplate being a bit better in most cases. I have managed to get three blackplate tubes with the silver clips on the middle mica...If you've read Joe's tube lore you know what those are, and these have an amazing 3d image quality to them. All my Ge's have great punchy bass and do almost everything very well...detailed, extended, but maybe not the most refined, great rock tube.
Another tube I really like is the RCA command blackplate, this tube has a soft quality about it, great for classical music...nice and mellow but still very detailed with great bass. I also have some 3-mica RCA's that are very nice but a bit tizzy...
I have a pair of Raytheons but never really loved them, they are nice but a bit to bright in my gear...a bit tizzy.
I have some Tung Sols too and they are good but to me just all around good with nothing exceptional in any given area.
My quest has become finding a tube that gives me everything I want and has the least amount of glare on the top end, this is of course a factor of the gear you are using and the tube combination....I have Tung Sol 6550's and love them, my other tube type is the 12at7 and I have tried Mullards, Telefunkens, Raytheon, GE, EH, and Sylvania. The combination with the 12ax7 position is really the key...I have some Sylvania GB and found them flabby with all my combinations until recently I tried them with the Sylvania 3mica military 12at7's I had stored away because they were mediocre with all my other 5751 tubes. As soon as I heard this combo I knew something was special, No more glare at all, great mid-range, lots of air without being overblown like a Tele, and the most punchy and realistic bass I've heard yet in my gear. I've only discovered this last week after going a bit insane rolling every possible combination I could muster through my amp. You never know what will work....these 12at7's were super cheap...$15.00 for 14 of them. I also tried a nicer GB 12at7 Sylvania but it didn't do the trick ....only those old nasty Jan tubes.
I'm kinda going backwards from you...I started with 5751's and am now trying some 12ax7 tubes to make sure I'm not missing anything....tried Tele's, RCA, Tungsol and some new production stuff, new Shuguangs are quite impressive....and some 12AX7lps on the way....and am keeping an eye out for some bugle boys but they are quite pricey. I might be selling a bunch of my stock soon though to finance the purchase of some GB's as I don't think it gets much better.... for me anyways.
