For the same reasons you would want flat frequency response. Phase shift is one of the three fundamental attributes of sound waves (the others are frequency and amplitude). It is a time-based phenomenon that is at the root of comb-filtering and our ability to localize sound sources in rooms. In my opinion, it's equally as important to maintain the integrity of the original musical waveform as it is to have flat drequency response. Many simply have not spent time with a time/phase coherent speaker system done properly (there are many designs claiming to be time/phase coherent but are not). Those who have generally cannot go back to severly phase shifted systems.
