Zelenka is my favorite of the "lesser knowns". Most of his orchestral music is good. My favorite works are the Sinfonia in a minor, Capriccio #5 in G, and Ouverture in F. Dunno if it's still in print but there was a nice three disc set of his orchestral music played by the Camerata Bern on the Archiv label. Zelenka's trio sonatas are also good. The recording I have features Glaetzner and Gortitzki on the Berlin Classics label.Heinichen is another from that era that I like. My pick for him would be his Concerto in F, S.234. Recording by Musica Antiqua Koln is what I have.
Not really a lesser known composer but Telemann's Fantasias for Violin Solo should be better known than they are. I like Andrew Manze's recording on the Harmonia Mundi label.
