William,Hello. I would also measure the filament voltages on all the tubes, because if you buck the primary with the 5 VAC winding, those voltages will be reduced also.
Sonically, I like slightly lower filament voltages, maybe in the range of 6.08 to 6.13 VDC for a nominally-rated 6.3 V rated tube, but this is DC listening with a coated cathode, not sure where AC heating needs to go.
I see nothing wrong with the 5 VAC winding buck !! Its a very GOOD idea. I would also suggest you use a Keystone, etc. CL-80 ( 60 ohm ) or CL-90 ( 90 ohm ) negative temperature coefficient thermistor in series on the primary winding to reduce turn-on shock. On the secondary, I'd use NO added resistances - to retain lowest possible DCR there, as per Dr. Halijac's "Figure of Merit" of a power supply formula, from my prior Forum postings.
Traitor !! Shame on you to use solid-state diodes on the TUBE DIY Forum !! Just kidding. Thats OK, I am now listening to ( and enjoying ) a small 1976 solid-state Harmon Kardon receiver with minor wiring mods. But I would listen to a banana peel as a device, if it gave me the results I want.
