You can rip out the R3 and R1 and throw in a 100K pot without fear of positive grid current. Find the level of sensitivity you require and install two reisistors that replicate the pot setting. 6SN7 will also fix your problems of excess gain.I put together a guitar amp years ago where I forgot the grid resistor on one of the tubes. When you played through it you got one note then it all disappeared. Took me a while to find the cause but harmed nothing.
