I only meant that split bobbin with identical windings makes things more symmetrical than when all windings are placed on the same bobbin.BTW, separated windings aren't as bad as you suggest if the core has high perm and windings are very close to the core, preferably in just one layer.
As to the big core IT, you indeed need less turns for the same inductance, however the length of wire (which is equivalent to winding capacitance) will not change. Stray inductance is also unlikely to improve because at low core permeability this parameter is more dependent on winding diameter than on proximity of winding to the core. It is a textbook knowledge that coupling in gapped transformers is poor, and nothing can be done to improve it other than decreasing the gap.
