They should easily have enough power for a mono amp. If you are going to require more than 250mA, you could use 2 5AR4. You can parallel the 5v windings with no issues provided you keep them in phase. If you start with a choke input and you do not have enough voltage, adding a 1uf cap before the choke will bring up the voltage. You can adjust it this way until about 5uf where the voltage increases stop, more than 5uf helps filtering. You did not say what you wanted to build.
