"I'm looking for a fast, transparent and open sound"

>Is thinner wire the better?<

YES! As thin a solid core as you can happily work with - but no thicker than 30AWG.

>Should I use shielded wire for all internal signals wiring or unshielded will do?<
NO! The added capacitance will kill the bandwidth and loose the three values you are seeking.

>Should I run all twisted pairs everywhere or separate signal and ground runs work just as well?<

For short runs use single wires.

For longer runs like from sockets on the back panel up to switches etc on the front panel - use a three wire braid - with one wire for signal and two for earth, but ONLY connect ONE end of ONE of these earth wires, leaving the other end floating. This turns this wire into a "shield" that doesn't make any connections that can generate earth loops.

If possible, use very thin foil for the earths to get the resistance down but not to loose the detail and dunamics from the "thinness" and definitely star wire them to one central point.
