Charlie,PP transformers from consoles usually have three wires on the primary; one for each plate and one for B+. If it has ultralinear connections then there will be two more, typically with the same colors as the plate wires, but with a different colored stripe. Along the same lines, SE transformers from consoles usually have just two wires (plate and B+.) Ultralinear is possible, but I don't think I've ever seen one.
The transformers you're talking about are almost certainly EI type. That means the core is made from a stack of laminations in the shapes of E's and I's. Each layer is made up of one E and one I, with the I butting up against the open legs of the E forming something like an 8 shape.
In an air gapped transformer all of the E's are stacked on one side and all of the I's on the other. A thin spacer is placed between them to form the gap. In an ungapped transformer the E's and I's are interleaved. The I is on alternate sides on alternating layers; each I is squeezed between two E's. Sometimes you'll see them grouped with stacks of 6 or 10 in the same direction...
You need to look at the short edge of the core to tell if the laminations are interleaved or not. If your units use C channel mounting (probable if there are no end bells) then you might need to gently open the channel to get a look at the edge of the core.
