Your best bet is to hire an architect with sound-engineering experience (no pun intended). Johns Mansville among others make sound absorbing materials that will address this problem but applying them is going to take an expert. I feel you will have to have some sort of drop ceiling. You will also have to address the condensation problem on the inside of a metal roof. A metal roof weeps condendation when ever the temp differential changes at sunrise and sunset. This moisture in contact with sound absortion materials is a REAL downer. G.R.
