My pick for the best mics to use on acoustic instruments would be the CAD VSM-1 single pattern tube condenser. I've used them in the studio and have become a big fan of the mic. It's worked on Piano, Acoustic Guitar, Drum overheads and even vocals.

As far as placement on piano is concerned, I usually go with a V type placement just behind the hammers, just left of center and about 6 to 7 inches above the strings. For acoustic guitar, placement should be near the sound hold about 6 inches back and I use about 2 to 4dB compression. Be careful about what compressor You use, You want to keep Your levels consistent but You don't want the compressor to "Pump".

For upright bass, I use the EV PL20 dynamic
For Drums, I use the EV PL20 for kick, CAD88's on the snare & toms, CAD 92 on the high hat and Neumann U-87's overheads if I'm using my CAD VSM-1's elsewhere.
