Those are antiques. Since they defined the single op-amp pin-out, there are a lot of upgrades possible. Just look out for the fact that the 741 has external compensation possible so there might be some junk you have to remove as most modern op-amps are unity-gain stable (those that are not usually say something like "Stable to gains of xx). Anything should sound better than those, even the TL071. I disagree about the FET input, they can sound good, I mean we are talking about upgrading from a 741 here.
