hello,Monarchy Audio, a San-Francisco based operation headed by one very nice gentleman (CC Poon) has two D/A converters with analog volume controls that have XLR balanced outs. They're not cheap, at around $1400, but you get a top quality d/a converter, and XLR outs. They show up every now and then on the used market (www.audiogon.com). I've owned Monarchy Audio products in the past (SM-70 true balanced Class A monoblock) and they have some of the best bang-for-the-buck in this entire industry. Also, CC Poon is a pleasure to deal with.

ps: balanced cables are only necessary for long runs, ie: microphones, or amps where the source is far away, ie: PRO audio. Your problem is that you're using a passive volume control, which doesn't put out much signal, and certainly not enough voltage for balanced. Generally, single-ended (ie: not balanced) is around 1.5V p-p, and balanced is 3 volts p-p. Also the impedance of a balanced connection is much much higher. With that said, I've used adapters to no ill effect...
