Ah, there's the rub.

The problem is that pro-gear of the sort you might want isn't cheap, I'd recommend Manley by the way, and consumer gear just doesn't use balanced lines. There is an option, though, and that would be a pro line level mixer, which aren't terribly expensive and have very adequate noise specs, as well as the ability to drive long lines, and in the pro realm long lines means a hundred feet or better. I'd take a look at the Behringer RX1602, which offers a lot of flexibility for only $100. You'll still need to use a separate RIAA pre-amp on your turntable to get a line-level from it.
As to cables one place I would stay away from is Rat Shack, as their connectors are junk. Make your own, using Neutrik connectors; get them at partsexpress.com. Get your wire there also.
