Foobar2000, which I use, can be set up to sort by multiple tag field combinations. Favorites I've set up include:Composer/Genre/Album Genre/Composer/Album Artist/album
In my case 'Genre' for classical music means Symphony vs. Concerto vs. Chamber ... etc. Also 'Artist' is album artist unless unavailable.
