Mark,The Airport uses a USB part PCM2706 which is fixed at 32, 44.1 & 48K and that's it. So I don't know what kind of effect iTunes will do with it.
If you are using toslink out of the Airport, some dacs indicate what speed it is clocking at.
The ipod even though it has 24 bit dacs will not take anything over 16 bits. I have not tried 16/48K aiff files, maybe interesting to try.
