Apple started out as a hardware company, and it's one of their strengths. MacOS wouldn't be nearly as reliable if Apple had to spend time writing drivers around every chipset quirk and hardware bug, instead of focusing on writing stable drivers for a handful of configurations as they do now.
Microsoft used to make NT available for a variety of platforms, including MIPS, PowerPC and Alpha (running NT on an Alpha was awesome.) They've since killed that project, as it was impossible to maintain hardware drivers for all those architectures.
Microsoft now has a trusted platform program, where they certify a vendor's hardware is fully compatable and stable when running Windows Server. A special release of windows is created by the vendor for their hardware, and it goes through extra testing to make sure it's stable. It costs a ton, but it's basically what you get when you get a Mac, an OS created for a specific hardware configuration.
