The MP-1 volume control is more like 250K.The output impedance is not what is paramount- it is the value of the output coupling cap, which is set fairly low with the intention of preventing it from significantly messing with the sound (big caps do that).
A 100K volume control will work Ok if there are no other loads on the output of the phono section- it will cut off at about 3.5Hz.
When we experimented with opto-coupler technology, the results were not so good, but that was a few years ago. I'd be interested in your results.
