JohnM,You probably want an antistatic mat if you ever intend to use power MOSFET transistors in things like Superregulators. Be sure to ground the mat and wear the wrist band wired to the mat when the FETs are out of their bag.
If you intend to stick with tubes, then the antistatic capability is superfluous. A thick rubber shop floor mat makes a good working surface that prevents damage to the table top and cushions components. The ribs catch and hold small parts and keep them from rolling under the refrigerator. It will burn with extended exposure to heat, but is fairly robust against accidentally dropping the iron.
If you must work in your kitchen, please keep in mind that some solder contains lead, and be scrupulously clean and tidy about solder splashes, especially if you have children. Flux fumes are irritating and also may contain lead: there should be plenty of ventilation when you work.
