I am assuming the way I would hook this is up running an RCA cable from the "downmix" analog audio outs... is this right?

Yes, that's right. The manual is available for download, and this connection is shown on page 38. For CD, I've found the sound quality of these outputs to be excellent. You might be able to do a little better taking the digital output into a very high quality external DAC, but then that won't work at all for SACD. For DVD-A the digital output is downsampled to 48 kHz, so you'd do better using the analog outputs of the Onkyo in that case. For two-channel DVD-A, the "downmix" outputs don't do any unnecessary processing, unless you have bass management enabled. Some DVD-A discs are MCH-only though, so in that case the downmix will perform the necessary conversion to two-channel audio.
