Your recollection is just fine as far as I can tell. Roon Core (now called Server) probably was running on your iMac before you got the Nucleus. The Ayre DAC has a streamer built-in and will work beautifully as a stand-alone headphone amp/preamp and Roon endpoint. Paired with the Senn 800 cans, you should get excellent sound.
Your desk installation with the Shiit units and Mac Mini can be easily set up as I described in my previous post. You just need some cables.
There is one thing I don't understand yet. I am not familiar with the KEF speakers or the Ayre DAC/Streamer. The Ayre QX-5 Twenty apparently has wireless capability, but can it connect with the wireless KEF speakers? Otherwise, you won't be able to listen to the Ayre disk player through your KEF speakers. But maybe you've already got that sorted out.

The Ayre DX-5 DSD is connected to a 75" Sony XR that connects to the LS60 via eARC -- the LS60s also does TV audio.
The setup I envision when I move to Casa Dorinda will use the LS60/KC62s for music and a Sony HT A9 SW5 for HT. In that configuration, HDMI audio from the DX-5 will go directly to the LS60. Kal Rubinson reports that provides excellent audio.
I do have the DX-5 DSD connected to the QX-5 Twenty via AES, but I haven't explored connecting the QX-5 to the LS60 -- I've always assumed the DAC in the DX-5 is equal to that in the QX-5.
As I suspected, you've already got it sorted out.
I didn't know there was a possibility for a wired connection to the wireless KEFs, but that solves it. I was not aware you could pass audio other than DVD movies via HDMI Arc, but maybe it works if you route it through the television. I'm not a HT guy so admittedly don't know much about TVs. Anyway, whether it is HDMI or S/PDIF connection from the disk player to the KEFs, sounds like you have a workable solution.
