any opinions on what is best? With such a wide range does it make any difference what I use?

Go by what the manufacturer recommends and keep in mind the amount of Power required. Volts X Amps = Watts so be sure the power supply can source enough current (Amps). And keep in mind that NUCs (and other PCs) will draw more power during boot-up.
Comes with a 19V supply but it can run from 12-19VDC hence the question.... is there any reason to run it a particular point in that range?

Since Power = Volts X Amps you will need a higher current (Amps) rated power supply when running 12 Volts vs 19 Volts.90W / 19V = 4.7 Amps
90W / 12V = 7.5 Amps
And it's not clear if those ratings are peak or average (probably peak). If you go with a 12V power supply a unit that can output 10 Amps should have sufficient head room to spare. Make sure the cabling connections are reasonably tight.

I'm very happy with an HDPlex linear which has that capability although I use it to power an ultraRendu at 7V.
Most anything would be better than the crappy switchers found in general purpose computers.
