I understand your scenario 100% and I do the same thing in Roon (with Qobuz & Tidal) even though I don't always have to. My music will be on the iPhone in "offline mode" instead of streaming real-time over the cellular network. There are times when there's simply no cell service for reliable streaming.For example, in deep valleys with tall mountains and trees on each side which I encountered over the weekend as I drove from Lone Tree through Sadalia toward toward the South Platte River south through Deckers past West Creek and down into Woodland Park. Took the same scenic drive home on Sunday afternoon. Saw several folks fishing along the South Platte.
It was a fun drive with long segments of muddy snowy winding roads. No cell service and unreliable maps most of the way. I also download sections of Google Maps for those situations.... but I already knew where I was going.
Lone Tree -> Sadalia -> Deckers -> West Creek -> Woodland Park
P.S. I have the T-Mobile Magenta plan for 55+ with a 5GB data limit. I rarely ever go over and it's a little cheaper than their Magenta Plus unlimited plan.

is there any way to download to a flash drive so as not to occupy the phone while its doing GPS.

Not that I know of with music that is downloaded to the phone from a streaming service for 'offline' listening. If you could copy to a flash drive, it would probably be too easy to steal the music and the streaming companies obviously don't want that.
