The Max Plate watts for an EL34 is 25 Watts. If you are biasing them at 33mA x 500 volts you are running at 16.5 watts standing (no signal) current. This is 66% of max and a good safe point. Cranking them up to 45mA will have them running at 22.5 watts which is 90% of max.If you are saying, "gee, that means I still have a 10% cushion" it is a wrong assumption. Your amps are likely running some level of AB operation which means that the current at signal is higher than the standing current. This will push your tubes above the rated max when you drive them with signal.
You like the sound of heavily satruated tubes, so do guitarists and to get that sound you have to replace output tubes fairly often. To get a different sound than the JJ's, try switching brands to something like the Winged C or even the large bottle 6CA7. You could also change the coupling capacitors to a paper-in-oil type.
