if the circuit has overall feedback then the gain is set by the feedback ratio and you won't hear any difference. If it's a no feedback circuit then the 12AX7 should sound a bit louder for the same volume setting. The 12AX7 has a maximum voltage gain of 100, as opposed to 70 for the 5751, but in a real circuit (unless it is loaded by a constant current source) it will be less. Assuming that the gains are in the same ratio, the AX7 should be about 3 dB louder, which is noticable but not dramatic (to sound twice as loud it would have to have about 10-fold power gain, which is about 3.16-fold voltage gain).
