In an amp and a CDP and have used a couple of the tubes on your list.In general I found the Sovtek to be neutral to cool in tone but they were quiet and rugged.
I found the EH to be congested in the mid's - I was quite disappointed as I like some of their other small tubes like the 12AX7's.
I think the EI's are excellent. The problem with EI's is that they can be microphonic and bothersome in some applications, probably most anything involving high gain, but I use them successfully in a amp and the CDP that I'm using without any issues. I suspect using them in your head phone amp wouldn't be a problem and I would give them a try. Tonally speaking I think they are one of the best new production 6DJ8's.
I haven't used the other tubes you have mentioned. But if you have to go to NOS to get what you want look at Siemans 7308's (a bit pricy but a great tube). I also use and recommend NOS EI's and Tesla's if you can find them.
