Good luck. Most metal bands have been relegated to small labels where the recording budgets are small. I find anything produced by Max Norman is well recorded. This would include some older Loudness, Ozzy Osbourne, Fates Warning, Death Angel's Act III. Flotsam and Jetsam's stuff is generally well recorded, but I have yet to listen to their most recent on Crash music. Metallica is generally well recorded, at least the percussion. Testament with the exeption of Souls of Black, which sounds like it was recorded in a garbage can.John Atkinson pointed out some years ago that one of the last places in pop/rock in which drums are naturally miked for recording still exist is in heavy metal. I think he is right.
